Yeast Free Homemade Cinnamon Rolls

Do you guys remember when McDonald’s served cinnamon rolls for breakfast? They were literally some of the best cinnamon rolls. Aside from the canned cinnamon rolls, they were possibly the only other cinnamon rolls I’d enjoyed as a child. There was a McDonald’s located around the corner from my elementary school in Arkansas. There was a sign in the window that would light up when fresh cinnamon rolls were available. I vividly remember paying close attention to that sign and begging my mom to stop when it was lit. These Yeast Free Homemade Cinnamon Rolls cause those memories to come rushing back to the forefront of my mind.

These cinnamon rolls are made from scratch without yeast. They are also free of dairy, eggs, gluten, and soy. Although this recipe omits most of the main ingredients you’d find in conventional cinnamon rolls they are just as (if not more) delicious. Your family will love their ooey-gooey center and soft and fluffy texture. They will never guess that these homemade cinnamon rolls are also free of the top 8 allergens!

Ingredients you will need to make yeast-free cinnamon rolls

These yeast-free cinnamon rolls can be made with just eight ingredients.

Cinnamon Roll Dough

  • Gluten-free flour – I only use two brands of flour when baking gluten-free cinnamon rolls: Bob’s Red Mill and King Arthur Measure for Mesure baking flour.
  • Non-dairy milk – full-fat coconut milk or oat milk work well here. The original recipe called for almond milk, but we have a nut allergy in my house so that wasn’t an option for us.
  • Plant-Based Butter – I prefer plant-based butter in baking stick form. I also only use brands that are soy-free. The baking sticks can be difficult to locate so I use this product as an alternative.
  • Baking Soda – The original recipe called for active yeast of which I substituted for baking Soda. Either will work fine. Although using baking Soda may limit the rise of your cinnamon rolls.
  • Maple Syrup
  • Salt

Homemade Cinnamon Roll Filling

  • Plant-Based butter
  • Brown sugar
  • White sugar
  • Cinnamon

Vegan Icing

  • Powdered sugar
  • Non-dairy milk

How do you make cinnamon rolls from scratch without yeast?

Making your cinnamon roll dough is fairly simple, it’s just important that you give your dough time to rise. In a small bowl combine milk, melted butter, maple syrup, and salt. Sprinkle baking Soda over the top of the wet mixture, then whisk together. Baking soda will forth a tiny bit. Set aside for 10 minutes. Slowly add in gluten-free flour and mix well. Using your hands, form the dough into a large ball and place it back in the bowl. Cover the bowl with a kitchen towel or loosely with plastic wrap. Allow your dough to sit, unbothered for 30 minutes.

While your dough is resting, prepare your rolling station, baking pan, and cinnamon roll filling.

Lightly grease a medium-sized baking dish with non-stick cooking spray and set aside. Next, prepare your baking station by generously dusting a clean surface area with gluten-free flour. I prefer to use wax paper rather than dusting my countertop or kitchen table with flour. Lastly, for your cinnamon roll filling, combine your brown sugar, white sugar, and cinnamon in a small bowl, alongside your room temperature butter.

Once your dough has set for 30 minutes, flour a rolling pin and roll the dough into a 1/4 inch square or circle. Brush dough with softened butter and sprinkle with filling mixture. Starting on the long end, roll the dough up tightly like a jelly roll and brush with any remaining butter. Next, slice the roll into eight slices and add the rolls to your greased baking dish (close but not touching). Cover your cinnamon rolls with a kitchen towel or loose plastic wrap and allow to sit for 30 minutes.

Bake your homemade cinnamon rolls for 35 minutes. Add icing to warm cinnamon rolls.

What can you use instead of yeast in homemade cinnamon rolls?

In baked goods, you can replace yeast with an equal amount of baking soda. Just keep in mind that the leavening effects of baking soda will not be as distinct as those of yeast. Baking soda causes baked goods to rise rapidly, but not to the same extent as yeast. You can also use baking soda + acid, or sourdough starter. I’ve never used either, so I can’t recommend those.

The best baking flour to make gluten-free cinnamon rolls

As I’ve mentioned in numerous other blog posts, I prefer to use gluten-free flour that already contains xanthan gum. When I first started baking I would use this brand, but have moved on to different brands. Of course, there are tons of recipes for creating your own gluten-free flour mix, but I honestly have no time (nor interest) in doing that. How to properly store and reheat your leftover homemade cinnamon rolls

Making cinnamon rolls from scratch is a fun process that yields incredibly delicious results. These results are BEST when enjoyed fresh out of the oven. The key to preserving your homemade cinnamon rolls is maintaining moisture. Storing your leftovers in an airtight container like these will help ensure your cinnamon rolls do not dry out during refrigeration. These yeast-free homemade cinnamon rolls last 2 days in the refrigerator.

You can also freeze your cinnamon rolls for up to two weeks. I suggest wrapping each homemade cinnamon roll individually and placing them in a ziplock bag. You can freeze the rolls, baked but unfrosted. Later, you can thaw them out, warm them for just a few minutes in the oven, and ice them while warm. Or you can freeze the rolls completely iced and finished. Just allow them to cool, then cover with plastic wrap and foil.
