Gluten-Free Vegan Apricot Crumble | TastyBits
Enjoy this Gluten-Free Vegan Apricot Crumble for breakfast or dessert! It's certainly a recipe the entire family will enjoy!
- 1 1/4 Cup Gluten-Free Rolled Oats
- 3/4 Cup Gluten-Free Flour
- 1/2 Cup Vegan Butter softened
- 1/2 Cup Packed Dark Brown Sugar + 2 tbs for sprinkling
- 1/4 tsp Baking Soda
- 1 Cup Apricot Fruit Filling canned
Preheat oven to 350 degrees
Spray 9 x 9 pyrex baking dish with non-stick vegan cooking spray
In a large mixing bowl, combine oats, softened butter, dark brown sugar, baking soda, and gluten-free flour with a pastry cutter or fork.
Measure out 2 cups of oat mixture and firmly press into the bottom pyrex dish.
Carefully spread apricot filling over the crust roughly 1/4" from the edge of the crust.
Bake 40 minutes
Let cool and enjoy!
The original recipe from Mom Endeavors was for Apricot Oat Bars, but mine wouldn't set. So this recipe quickly turned into a crumble instead.
