Foil packet dinners are my new favorite thing. They make even the most basic baked chicken and potatoes dish shine like a star.  Not that this recipe is basic, but it’s certainly not rocket science. Which is GREAT, because I’m not a rocket scientist. This recipe requires you to lightly marinade your chicken, wrap your easy lemon chicken and potatoes in foil, and toss it in the oven for 30 minutes. Using aluminum foil in when baking chicken helps keeps your meat tender and juicy in this recipe from the juices from the chicken breast aid in cooking the potatoes.

HOW TO MAKE EASY LEMON CHICKEN AND POTATOES IN FOIL

Organic chicken, baby potatoes, mustard, herbs, and lemon juice are the main ingredients that make this easy weeknight meal a winner.

Ingredients:

  • Olive oil
  • Dijon mustard
  • Whole grain mustard
  • Dried thyme
  • Dried rosemary
  • Zest of 1 lemon
  • Kosher salt and freshly ground black pepper, to taste
  • 1 bag of baby potatoes
  • Skinless chicken breasts
  • Fresh parsley (garnish)

Directions:

  1. Preheat oven to 375 degrees F.
  2. Wash chicken breasts and pat dry.
  3. In a small bowl, combine 2 tablespoons olive oil, Dijon and whole-grain mustard, dried thyme,  dried rosemary, and lemon zest; season with salt and pepper, to taste. Set aside.
  4. Season halved potatoes with oil, salt, and pepper. Set aside.
  5. Cut four sheets of foil, about 12-inches long. Divide potatoes into 4 equal portions and add to the center of each foil in a single layer.
  6. Fold up all 4 sides of each foil packet. Drizzle with remaining 1 tablespoon olive oil and season with salt and pepper, to taste; gently toss to combine.
  7. Top each packet with the chicken. Using your fingers or a brush, work the mustard mixture onto both sides of the chicken. Top with lemon slices.
  8. Fold the sides of the foil over the chicken, covering completely and sealing the packets closed. Place foil packets in a single layer on a baking sheet. Place into oven and bake until the chicken is cooked through and the potatoes are tender about 25-30 minutes.*

WHAT IS A FOIL PACKET DINNER?

A foil packet dinner is essentially when you prepare a full meal inside a wrapped piece of foil. It’s a method of cooking meat in foil that holds and concentrates the heat closer to the meat. This causes the heat to exit the stall stage faster than without using foil, shortening the cook-time, and making it more predictable. Additionally, the foil helps the meat retain moisture.

ADDITIONAL COOKING TIPS

Potatoes. Check baby potatoes at the 30-minute mark. They should be soft and fork-tender. If they are still hard, allow the foil packet to remain in the oven for 10 more minutes.
Crispy Chicken Skin. Turn your broiler. Leaving the sides of your foil packet pinched together, slowly open the top, exposing the chicken. Be careful because there is hot steam inside the foil. Place opened foil packet under the broiler for 2-3 minutes.
Baking Foil Packets. While baking with aluminum foil is perfectly safe, I suggest placing your foil packet dinners on a baking sheet in the oven. This helps ensure that any juice that may seep from the foul is caught on the tray vs. The oven’s surface.
